INSPIRACIÓN
Nebaj is a territory that is considered part of the Ixil Triangle, located between a branch of the Cuchumatanes Mountains to the south and the Chamá Mountains to the north. It is right there that Giuseppe Azzari, an Italian migrant who arrived in Guatemala in the 1930s, developed Chancol cheese,
which is named after the farm he managed and is inspired by the Italian cheese
Grasso d’Alpe.
