The second tasting menu sought to be an evolution of our first menu, maintaining Guatemala’s history as a guided thread and using some of the key ingredients of contemporary gastronomy. This menu also portrays milestones or important moments that shaped gastronomy but focused more on the feelings and emotions those moments generated. This made the menu more conceptual, naming each dish with keywords that represented what the moment or milestone evoked in its creators, resulting in dish names like: “Small Piece of Land,” “Mestizos,” “Universal Passport,” and “Ambassadors.”.
