LONG LIVE INDEPENDENCE

TASTING MENU | SEASON III

The third tasting menu was inspired by the commemoration of the bicentennial of Guatemala’s Independence. Through a narrative gastronomic proposal, it addresses the most significant milestones from 1821, the year the Act of Independence was signed, to present day, highlighting those moments that have directly influenced the evolution of Guatemalan cuisine.


This journey enlightens key events through signature dishes such as: “NuestroQuaderno de Cosina,” referring to the first cookbooks, “Grana y Añil” which focuses on two of the most important agricultural products of the 19th century in the country, and  the industrializing ofourselves, this paid tribute to the industrial food products developed at the end of the 19th century and throughout the 20th.
