Our current menu is inspired by different regions of Guatemala that evoke feelings and memories in Guatemalans and in those who have come to know the country. Through gastronomy, we seek to travel through time and history, connecting emotions with emblematic places.
Each course of the menu represents a historical period — from the Archaic period to the Colonial era — and a human emotion associated with it (such as illusion, pride, surprise, happiness, or nostalgia).
The journey includes places such as Huehuetenango, Lake Petén Itzá, Tak’alik Ab’aj, Zaculeu, Iximché, Puerto de Iztapa, Sololá, and Tajumulco, among others, each with its own story and emotion.
The menu aims for diners not only to enjoy the food, but also to relive collective memory, reconnect with the land, and experience Guatemalan identity from the table.
