The first tasting menu broadly aimed to tell the story of Guatemala through 12 dishes that represented milestones of important moments that markedand somehow shaped its gastronomy. This menu begins from the formation of what we now know as Mesoamerica, a conceptual cultural area, to contemporary Guatemalan history. This menu had a wide scope, recognizing important symbols such as the “Mesoamerican Triad,” aiming to demystify some beliefs about the country’s history and calling upon a reflection of the Guatemalan cuisine.
